You’ll want to make these for breakfast!
- 1 1/2 cup whole wheat pastry flour
- 1/4 cup cornstarch
- 2 tablespoons firmly packed dark brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon grated nutmeg
- 1 cup sweet potato purée
- 1 cup buttermilk
- 4 tablespoons unsalted butter, melted
- 2 eggs
- 1/2 cup diced thinly sliced ham or 1/2 cup diced smoked salmon (optional)
- Canola spray oil
Preheat a waffle iron.
In a medium bowl, whisk together flour, cornstarch, brown sugar, baking powder, salt, and nutmeg. In a large bowl, whisk together sweet potato purée, buttermilk, melted butter and eggs. Add flour mixture to sweet potato mixture and stir just until evenly blended. Fold ham or smoked salmon, if using, into the batter.
Lightly coat a waffle iron with spray oil. For each waffle, spoon about 1/3 cup batter onto the waffle iron (the quantity will depend on the waffle iron). Close the lid and cook according to the manufacturer’s instructions. Repeat with remaining batter.
